Okay, I figured this out. If the Enhanced taskbar is on, with "Always combine taskbar buttons" selected, my custom icons are displayed on the taskbar. If the Enhanced taskbar is on, with "Never combine taskbar buttons," the apps default icons are displayed on the taskbar. Right click on a blank space on your start11 menu and check the status of the lock, because if it's not locked, you should be able to move pinned apps to another tab.
You should be able to move pins between tabs. Make sure you don't have the Start11 menu locked.

I think this might be a known issue; trying to pin an item from the search menu. Instead, perform the search and then right click>Open file location; now pin that to Start11. You might have to select "Show more options" to get to Pin to Start11. Or, right click on the Start11 menu where you want to pin the app, and select New>Pin installed application..., and then navigate to the app and select it. See if those work for you.

The only way to have a custom start button centered on the taskbar is to turn on the Enhanced taskbar in Start11.
Just curious where the icons are picked up from when the enhanced taskbar is on? I have a lot of custom icons for apps stored in the following locations: C:\ProgramData\Microsoft\Windows\Start Menu\Programs C:\Users\”UserName"\AppData\Roaming\Microsoft\Windows\Start Menu\Programs When the Enhanced taskbar is turned off , these custom icons are displayed in the taskbar when the apps are open.

To clarify, I hear you saying you only want documents in the "Recent documents" list on the Start11, Windows 11 Style, menu like the stock Windows 11 start menu. That is a fair ask, but unfortunately, I don't think you can do that in Start11 right now. It's best to make this a Feature Request for an option to only show documents in the Recent documents space on the Start11, Windows 11 Style, menu.

Set that option to off and right click the Start11 menu select Group widths>6 small icons and that should work.
Sounds like the taskbar is unhiding, but it's not displaying properly. Try changing the Display Scale and/or the Display resolution and see if it makes any difference.
The smallest you can make the Windows 10 Style is 6 small icons.
For some reason Quick Settings is showing up in the "Recent Items" list.
