Unfortunately there is not an option to compact the pace between listings, but there is a way to force a scrolling list instead of multiple menus. It is an approved and published Registry string. Stop Start11 making menus multi column and instead use a scrolling list Add a New String Value key and name it S11_AlwaysScrollMenus and set the Value data to 1 <

How did you pin the Calculator to the Taskbar? The best way to pin an app to the Taskbar is to open the app, and then right-click the Taskbar icon and select "Pin to taskbar."
Those are Windows watermarks showing the Windows version. These are usually used on Insider preview versions, but this is Windows 10 Enterprise LTSC.
Open the config app and click Configure Menu; open Advanced options and turn off "Show app list in start menu."

Assuming you are using the Windows 7 style, open the config app and go to Start Menu tab and click Configure menu > Quick access side shortcuts. Click the down arrow on the right side of "Quick access shortcuts," at the top, and select "How should icons be shown > Only show icons.

I use the Windows 10 style Start11 menu and what I have done is to add a page and create a group named NEW PINS. Whenever I pin a new app, file, folder, etc., I pin it to this group, and then resize, rename, change icon, etc. Now I can drag it to the group and the position where I want it. To drag this new pin to a different page, just drag it to the page identifier (dots) at the bottom of the menu. I know this is a workaround, but it makes adding item easier for me.
File Explorer does not sort this way without OneDrive. If a folder is not on OneDrive, folders will always be at the bottom or top, depending on whether Ascending or Descending is selected. Evidently when Fences creates the shortcuts for the Folder Portal, they are not located on OneDrive anymore. This is why you see folders either at the top or bottom of the Fence. Also why do your files show modified dates that have not occurred yet?
