So I just recently got the game, and in my first few forays into a comp stomp, I noticed that the only housing building I had available for my cities was a hut. Just a hut. So I'm playing on epic, and I reach turn 200, and my empire spans half the globe, yet my guys are still living in huts. I've seen houses in beta gameplay footage, any word on how I can upgrade to nice houses instead of huts?

You need a civic research for higher level housing. To reach it, you need to get administration and education researches first.
