Once you have your style picked as Windows 10, make sure you have "Use Windows 11 style icons" turned off and "Show app list in start menu" turned on in the Start11 Advanced Configuration settings. You can now right click start menu icons and set their size, turn on or off text, and change the color of the tile background. With the settings below, your start menu should look like the Windows 10 start menu. Play around with these settings and tweak your start menu the way you like it.

I believe the font color in the Start menu is controlled dynamically by the operating system. Depending on the color of the Start menu background, the font color is either white or black. If you have a dark background the text is white, and if you have a light background the text is black. I'm not sure if there are registry settings that could be tweaked to achieve what you are asking for, but maybe Neil or Sean would know.

If you don't have a copy of the Start10 installer, login to your account and go to "My Downloads" and download the current installer. Once you have the installer on your laptop, click to install and then reboot. Once you have rebooted, you should be able to open Start10 and set it up the way you had it before.

You could also move those tiles at the bottom to a new page. In 1.25 you can now use the scroll wheel to scroll through pages. If you make the start menu height smaller to hide those tiles, you will still have to scroll down to see them. Either way you are going to have to scroll. For me, scrolling to the next page(s) is my preference.

That is how transparency works. You see through the Start11 menu to what's beneath it. If there is white beneath it you see light-gray; if there is blue beneath it you see blue-gray; and if there is black beneath it you see black. If you want a light gray Start11 menu background, you will have to set the color to a gray you like and set Transparency to 100% solid.
