Try the map you made from the Steam directory galaxy forge without any mods. Some mods may change the galaxy to the point that maps made for the vanilla game won't work anymore. Hopefully your mod has made a custom galaxy forge tool available in this case.

This is the behavior for all titans, player and AI. Titans come back at the level they were destroyed at. They do get more expensive and take longer to build once they gain levels. The AI does not get experience faster, but harder AIs can train more capitalship levels for credits. This does not affect titans however. Chances are your AI was fighting another AI who was just feeding the titan.
You can't actually change the game speed in multiplayer, besides the usual game income speeds etc. at the start of the game. What happens in ICO multiplayer is that the game uses a lag prevention algorithm that for some reason, increases the game speed as a side effect. The greater the latency between players and the server, the worse the effect is. Typically this is very noticeable early in the game but goes back to normal as the game goes on. 1.95 was not a major patch at all, it shouldn't be breaking mods. I suspect the issue is either with the mod installation, or you actually need to go further back than 1.94.

Go to the main menu option, mod tab, then hit the "Show Mod Path" button. This will show you the location of your mod folder, which should be in the same directory as your settings folder, even if it is in an unusual location. You may then want to make sure the folders in that directory and settings files are not set to read only. Unfortunately multiplayer speed is a bit wonky in Sins in general. Often the game is fast at the start of the game, before gradually settling at a more normal pace. I suspect perhaps leaving it paused for a long time may do something similar. At one point it was said that this might be the result of some anti-lag algorithm, but honestly I don't understand how exactly that works.

The only significance I can think of the thirty minute mark is that the game autosaves every 15 minutes. 30 minutes would be the second autosave. Perhaps your autosave folder is set to read only or something weird like that (though the game should make a new autosave file each time)? Perhaps you can turn off autosaves and see if that changes anything?

I have heard its possible to designate a planet for a minor faction to spawn on, but not possible to select which minor faction appears. I suppose I should actually try it myself first however.

If you're interested in PVP, there ultimately isn't any substitute other than to take the plunge once you're comfortable. If galaxy forge is not working, you probably need an updated version of the .NET framework. Do you get any error messages when you try to open the one in the steam install directory? Galaxy Forge 3 is an older version used for pre-Rebellion Sins, and is not compatible with Rebellion.
Generally not. You basically need to know how to mod to mix major Sins mods. You can get a Kol and a Star Destroyer together in Star Wars: Interregnum .(Full disclosure, I'm one of the developers).
As in the angle you can jump from? Afraid not.
Make sure windows 10 Full Screen Optimization is turned off for Sins. They don't seem to play nicely with each other.
