I really don't think this has anything to do with Start11. Start11 only controls the highlight color of it's own context menus, and the highlight color of shortcuts when you hover over a shortcut on the Start11 start menu.

Apps control their own text highlight color. Windows controls the text highlight color in Explorer windows. Start11 does not have any settings which control or change the text highlight color. Something besides Start11 is causing this issue. I use Vivaldi, Chrome, and Edge browsers. All three us a medium blue with white text. Make sure "Use automatic color..." is off, and click pick color. When the color picker opens, pick black and then set the slider to the shade of gray you want to use.
You could also consider using PowerToys Workspaces, which will open a group of apps, each in a specific location on your desktop, or any virtual desktop. It also allows using CLI (command line interface) arguments which provides for opening a specific file in each app. Your entire screen would now be your group, arranged in a configured layout. You can create a desktop shortcut to the Workspace, and even pin it to the taskbar. I haven't tested it, but I would assume you can also pin it t

You could also display Quick Access below the ribbon.
I don't use multiple monitors, so I can't test these issues. If Basj is unable to help, he can forward this issue to someone on the Dev team. It looks like you have many unnamed groups in your start menu setup. I don't know if that is an issue, but you could try naming them and see if it helps. This looks like it might be an issue with your installation. I would recommend uninstalling, download the latest Beta (2.4.9.2) from your downloads page https://store.stardock.com/myaccount/products , and install. Make sure to reboot after uninstall, and again after the new install. Test and report back with the results.
Okay. Need your full windows version. Please use winver.exe. and your full Start11 version number. Also, are you using WindowBlinds?
That's where the Group name should be. Does this group have a name or is it blank? If it doesn't, give it a name and see if that fixes it.
