I'm having exactly the same problem. Peek/preview randomly stops working and only restarting explorer (via Configure Start11->Taskbar->Restart Explorer) fixes it. I'm on a standard Win11 Pro 22H2 install, upgraded from Win 10 Pro, details: Edition Windows 11 Pro Version 22H2 Installed on 26/05/2023 OS build 22621.1848 Experience Windows Feature Experience
