I ran into this too and couldn’t tell if canceling a route was even possible until I dug around. In the meantime, I found it helpful to map things out separately—used https://blackeaglefg.com/routing/ to mock up supply lines before actually building them in-game. Makes it easier to spot stuff you might want to change later without locking yourself in.
