Thanks for the screenshot. It looks like you have "Show my most used applications after my pinned shortcuts" turned on. If that is the case, when you select "Remove from this list," after you open that same app again a few times, it will appear again in the list.
Which Substyle do you have selected? I'm not seeing "remove from this list" in any of the context menus for Modern Style. Maybe you could post a screenshot of what you are seeing.

This has been mentioned by many users and, as of yet, has not been addressed. Here is a suggestion, and what I have done to alleviate this issue. First create a new page in your Start11 menu, and then create a new Group and name it Pin New Apps, or something to your liking. Right-click on a blank area of your dock and select "Settings > Add > Shortcut." Give it a name and click the Browse button. Navigate to "C:\Program Files\Microsoft Office\root\Office16" and select the app you want to pin. Then, if you want to apply a custom icon, click "Change Icon," and select the icon you would like to use.
In answer to your question, yes it's possible. Right-click on a blank area of the tab group and select "Appearance > Pick Color," and set the color to match the start menu background color. Now right-click on each icon and select "Icon > Color," and set the background color for the tile.
