I am also experiencing the same issue with the Widgets Icon missing with KB5041587 installed. If I turn off Start 11 and use the normal Windows Taskbar, it seems to no longer be a Widgets Icon, but its similar to the weather icon that was used in Windows 10. Edit: Doing the Widget Shortcut (Win+W) Brings in the Widget Bar from the right, so this might be because of a change in functionality within Windows 11. Start 11 2.1 Windows 11 Pro Version 23H2 OS
