Recent documents

Sorry to hear you are having issues. From what I know, there is no Recent Documents available for Windows 7 style on the left panel, but you can add "Recent items" link to your Quick access shortcut list (Windows 7 style right panel)

You are correct, however, it remains obstinately empty.

I have opened many files (Word documents, pictures, etc.) but Recent items is empty.

Have you turn on Windows setting for recent items? Something similar to my screenshot below.

Aha, that helped, thanks. Issue almost resolved.

The only problem is that it also shows folders where these items are located:

Is there a way around that?

Please try to open up more documents, files etc and see if they get listed there.

Yes, unfortunately folders get listed alongside with files:

I'm guessing this is a function of Windows 11, so not much can be done about that.

Just as a point of information. If instead of your variant, I'm using the Classic Start Menu, Recent works just fine:

Therefore, it is possible, the question is, will Stardock support it.
