[Start11 V2] Removing an item from the jump list
There seems to be no way to remove an item from the jump list, only to pin it. Am I missing something? I'm using Start11 v2.11

Sorry to hear you are having issues. From what I see, there is "Remove from this list" for jump list on the pinned item on taskbar and pinned item on Windows 7 and Modern Style Start panel. That option not available on other Start panel style.

I'm using the Windows 10 style start menu, and only use the jump lists in the start menu.
I believe it is depend on application you're trying to remove the jump list. For example if its Media player classic, you can go to file->Recent Files->Clear list. Something similar to MS Words and Excels etc.

Also, still not clear why it's not supported on the Windows 10 and Windows 11 start menu panels, since that functionality is available on the native menus.

If you really want to remove an item from the "Recent" section in a jump list, you'll have to open the app and then right click the app on the taskbar, and then "Remove from this list."

Hopefully this feature will get added to Start11v2, as it's available in the default Windows start menu.
Dev has informed that the missing option "Remove from this list" in those other Start11 Start menu style will be look into and might be included in future updates.
