Start10 - Pinned / Recent - How to configure? Within Start10 or Windows 10?

I am still on WIndows 10 and Start10...  (Start in Windows 7 style)

When I hover over Excel or Word the right panel shows the "Recent" file list.
When I hover over EditPadPro the right panel will shows "Frequent" file list.
Both limited to 9 files.

First I do not know whether this can be configured at all, second, IF it can be configured, where to do that, i.e. is this a Start10 matter or Windows 10 ?

For Excel, I would like to have the 'Pinned' files listed there, if possible.

As for pinned files, in excel you can pin a file, by click the pin icon next to that file name. Something like screenshot below.

Note : This is Start11 but I do think Start10 have similar feature on this.

Ah! Great, thank you very much.
Really appreciated. I didn't know one could actually pin in Start10.

Super.
A small 'trick': when opening a file and closing it, the file won't show up in Start10.
At least not with me.
The 'workaround' (in Excel) - copy paste some empty cell - save the file and it will show up when hovering over Excel.

(I'll have to see whether the pinned items will stick: the files are stored within a password protected encrypted container, like VHD.
After booting the PC, this container is unlocked and the files are accessible. Start10 is running already, immediately after PC boot, so maybe it looses 'track' of the files as the container has not yet been unlocked yet).
