I don't think MSN messenger skinnable. It will jsut take the skin you have for the rest of your Windows.

As far as WMP, it is a little complicated. You can download the SDK from Media Player's site.
WMP 7.1 SDK: http://msdn.microsoft.com/library/default.asp?url=/library/en-us/dnwmt/html/wmsdk.asp (there are currently no SDK yet for WMP8, but WMP7 skins will work on WMP8).

Basically the .WMZ extension is just a zip. So change the extension to ZIP and uncompress the file. The open the .WMS in notepad or any text editor. It's really just a text file like an HTML page. Windows Media Player requires a lot more programming skill than your average skinnable application. It uses a combination of Javascript and XML. Very cool and powerful format, but unfortunatly too complex for the average skinner.

Which makes it just a bigger challenge. But you really have to crawl before you walk and walk before you try to fly. To do WMP, you have to be rather familiar (say "expert") in XML and JScript (I think it's built up of those two). So try a simpler app first.
