Is it possible to change win conditions mid game?

In particular I was having fun winning when the game ended due to a cultural victory!
It generated an endgame save game, if I try to play on to to aim one of the other victory
conditions it just re-ends.

So is there any way of changing the settings mid-game?

Nope. I remember one game where I was building influence starbases and then giving them away to keep from winning by influence long enough to get the tech victory I was aiming for.

I shut off all the optional win types. A couple games I would have lost due to other races scoring the tech victory. Of course if you want to end a game quick, that can get you.
