Curious, if I order the open applications in my Windows 11 taskbar, can I save that order somehow?

I don't believe that's possible. You can set the order of pinned apps, but newly opened apps always open to the right of other open apps.

I guess I can just keep the programs running, they're not slowing me down.

If these are apps you use all the time, you should just pin them to the taskbar. Then you can put them in any order you like, and they will always be there to open when you need to use them.
