The ability to pin folders to the taskbar is nice, but definitely does need an option to change the icon.
As noted in the UI, you can change the icon the same way you can change the icon for any pinned app.
Right click on the pin then right click on the name and pick properties. That gets you a shortcut tab where you can change the icon.
Right click on projects and it should offer you a menu with properties on it

right click on pinned folder, right click again on the folder in the list. make sure you dont move mouse off the first menu. then click properties
restart (or at the very least restart explorer) for it to show up.
