Start 11 Listing all Windows Apps at Root Level

Installed Start 11 on a PC upgraded from Windows 10 to 11.  Noticed when looking at my Program listing in the Start Menu (Win 7 version) it is showing all the WindowsApps prior to my folder structure.  When I go to Windows/Start Menu/Programs, these individual icons at the root level are not there.  Where are they coming from?  Do I need to organize these into individual folders, but can not locate them in Windows Explorer?

Just noticed you can config Start 11 to show Universal Apps in their own folder.  If there is more information about this, possibly ability to organize them please let me know.  Thanks.

Was thinking being able to put Universal Apps into Folders instead of one long list when I access from the Start 11 Universal Apps folder.  Not sure where the icons are located since they are not in the "PROGRAMS" folder.
