Useless items in All Programs menu

I have a whole bunch of mostly useless items in the All Programs menu I would like to delete, or at least move to their own folder. I do not see any way to control these within the Start 11 options. They do not appear in either of the "Open" or "Open all users" folders. When I right-click and choose "Open folder location," the window simply opens to the Desktop folder.

So every time I use the Start menu I have to scroll down to access the actual items I use.

Any way to get rid of these?

I have Start 11 on Windows 10. Is that a mismatch?
