On two of my Win 11 machines, hit the start button and the pinned list displays. On a third, I have to hit the "back" button the shows after I hit the start button

Start 11 ver 1.24 "Windows Insider detected"
The first thing that comes to mind is that maybe you accidentally switched "start menu should open showing all program list" to "on" it should instead be switched to off.
