Some questions

The column on the left shows dots beside armies and cities to show how many units are contained.  What do the different colors mean?  red, green, yellow

 

What does "+5 Defense when defending" mean?   Does defense contribute when attacking?

I've also seen reference to something called "defense stance" or maybe "defense mode".  What is it?

 

The description for Docks always shows "Food per grain +5►+5".   Is that a bug or is Docks not intended to increase food/grain?  I've seen the similar indications on other improvements.  Why?

Red is normal unit, yellow is hero, I believe. Not sure on the others - but I think maybe there's a color specific to summoned units...

one color refers to the sovereign, i forget which....

As a wild guess, the improvement at that particular city replicates the effect of another improvement and does not stack so there won't be an increase. That's just a WAG though.

A unit defends when it passes its turn, even after moving.  So long as it does not attack, cast a spell, or use an ability to attack, it's considered to be defending.  Long ago, in E:WoM I believe, the pass button was labeled "defend".
