Underdroth and food

I'am a beginner like i think most of us. But whats up with those Underdroths i have the technology and i have some underdroth (and of course i build the building on them) but i can't build them?!?

And how can you have above +0 food production over a long time i only had ábout +1 for a short time but i couldn't improve the output.

Food needs to be farmed from fertile grounds and other food sources. Unlike other resources, it is zero sum - you don't accumulate it.
