To my knowledge, there is no way to do this. However, if you have OD+, then you can have multiple docks and tabbed docks.

For instance, I have my main dock at the bottom which contains general shortcuts & programs. I have a multi-tabbed dock at the top which contains various important programs and shortcuts, such as an Adobe tab for all of my Adobe cs3 programs. I also have a "Frequent" side tab where I placed a few shortcuts that I frequent often. :) And I also have a system tray tab on the bottom-left side.

You can set these docks/tabbed docks to slide off the screen when not in use. I hope this helps.

For what you ask I'd try to find or create something through Desktop X.

or, if you desperately need this, use object dock for one, then use rk launcher for another, then rocketdock.

or have one dock, and throw three stack docklets on there.

zubaz is correct. There is no way to run multiple OD docks as individual items.

DX widgets can do what you ask but with a bit more work involved to make them. check some of the DX themes for popup or toggled menus which have drag and drop capabilities and see how they are set up. you can take a single popup menu from one of these, set it up with the items you want and save it as a widget , building 3 widgets for each set of Shortcut types you want.  this would require DX standard or pro. ( DX Client can not be used to modify DX themes) go here for more details. https://www.stardock.com/products/desktopx/purchase.asp

If you decide to go this way, feel free to reply here as I  (and possibly others) will try to offer assistance if you need, in building the Widgets.

Just use a normal shortcut to folder, right click on it, Dock entry properties, check Show folder in a menu.

If the flyout has more than 80 items there is a setting in OD config, General, Miscellaneous Options, check Show flyout menus as normal menus when they contain over 80 entries.

As far as i know, its not possible to get rid of the 'open folder.' i've been doing a lot of every which way configuring the last week or so, and i haven't seen anything.

and i assume what you mean with your last question is to have a tab assigned to a folder. you can't do that, but you could just create a tab, name it the folder, and then add shortcuts to your basic folders. this won't help if you want it to display files that are constantly changing, however.
