Terrific !

I've never seen something like this before:

It is the year 2231 and there are about 8 races. I'am playing on crippling and each race has fleets with about 100 to 150 attack and something like 50 defensses. The humans declared war upon each race and they came with huge fleets of 54 logistics with above 1000 attack each and even more defenses....what the f**k? That's not funny, I mean after a few turns they closed the game with a tech victory. What's wrong with the humans?

I tried to paste a picture to my post showing their impressive military evolution in time, but don't know how to...

Is this a bug? I just selected the opponents from beginning without modifiying their skills or something...

What you describe is not uncommon when playing on suicide against ultimate AIs which have huge bonuses including miniaturization or if the ships are receiving boosts from military galactic resources. Do you have the AIs set to random? If so check and see what the Terran Alliance is set to. Check if they have military(red) galactic resources which each would boost its ships attack and defense 40%. Also military starbases (not to be confused with military galactic resources) boost ships within their zone of influence.

Rather than taking on the AIs superior ships, attack its economy. Take out its starbases which are poorly defended and capture its planets (you only need to destroy the planetary defenders not his fleets). Take out its transports trying to take back the planets; if they are protected by strong fleets you can't combat then destroy the colony before the AI reclaims it. With high soldering you may be able to hold it against one or more invasions.

Indeed, I checked the settings again under races' "personality" and interestingly among the rest only the humans were set up to 100% CPU...I never thought this will make such a difference. During gameplay, I sometimes use the option "force AI to use max CPU", but this seems to be another option which applies mainly to all opponents. Does this meant in this case the terrans were up to 200%? I guess I have to study somehow the settings better...
