Difference between Stars?

So can anyone tell me what the difference between each type of star is?

I don't think there is any difference between them. Maybe the habitable planets they support, bu that's it.

Yellow stars are known to be the best stars to find habitable planets around.

The yellow thing was true in Galciv I, but I'm not so sure it applies in the sequel.
