For me, I would like to play Master of Magic Mod or Master of Magic 2 Mod. Also a "boothill" style mod, a submarine warfare "You sunk my battle ship!" mod and any mod recreating the dnd/runequest experience.

Master of magic, obviously (probably my favourite strategy game & the reason I found out about Elemental).
Apart from that, an interesting, original setting, NOT a cliche d&d fantasy standard; like steampunk, cyberpunk a la shadowrun, maybe based on Steven Erikson's works.

Something like an XCom game but in a magical world.
I think making entirely new worlds are loads of more fun than recreating old ones. You should definitely take inspiration from others but not reuse everything they have.
I'd definitely try any mods that anyone makes, like we say in Sweden 'free is yummy'. But if I'd make anything it would be something new.
Reading all the suggestions here I got a wild idea about a post-apocalyptic steampunk world with science and magic. More crazy ideas anyone?
"Barbarian invasion"-esque mod. Tons of titan creatures attacking, slowly building up more and more.

I'd very much like to see a Civ total conversion mod!
And a Mod based on the Dune books. If the mod was based on the Empire rather than on Arrakis itself, it would be interesting to use the Dynasty feature to portray the Bene Gesserit breeding program. Perhaps it would even be possible to mod in a Dynasty Victory Condition for the breeding of a Kwisatz Haderach? A mod focusing on just the planet Arrakis would be interesting as well.
I've got a mod idea left over from Civ4 that was never realized. I'm glad I never got past paper with it (gotta get back to learning Python). Elementals features fit the idea much better. It also happens to be a fantasy mod, but it's the Elemental features that make this game the superior platform.
*cough* Riftwar...Midkemia lends itself perfectly to this game. I am surprised nobody thought of this earlier...do you not remember Betrayal at Krondor? damn kids....
And definitely Discworld as well.
Two mods come to mind:
1. Empire of the Fading Suns - Different factions with Space battles and Adventuring on other worlds.
2. Romance of the three kingdoms - this one almost sounds easy.
Isn't this what we are already getting with Elemental, what would really be that different other than names and places? Not sure you could really add AD&D rules or want to?
I would love to see a good warhammer mod! I just really like the setting and lore of warhammer.
Warhammer 40k would be really good too, but I don't know how much you can do with the E:WoM-system...

firstly steampunk/ magic meets modern times:
this includes mods based on "Shadowrun" these are such a natural setting and dear god microsoft almost killed shadowrun with its horrible implementation of online only competitive fps version that lacked any real contection to the shadowrun universe.

This little gem by Trokia games was a great fun game picture a blending of middle age with a burgeoning technological clash. truly an interesting environment

in particularly Deadlands: Weird West (The year is 1877. The place is the American West . . . but haunted by the forces of darkness. Undead gunslingers . . . hostile Indian spirits . . . strange cults . . . and, worst of all, the sinister Reckoners. The dimension-hopping (creating?) mechanic is something I'd like to try. Whether it's feasible is TBD.
It would be very nice to play in the world of Robert Jordans: Wheel of Time!! WOT is epic adventure on the grand scale. Its my personal favorite. Book 12 Towers of Midnight is set to come out this fall (whohooo WOT and EWoM will make this a fine winter indeed). With the final book, A Memory of Light coming late next year. Its gonna take time and creativity to port that world into this game. Might as well start now. I think EWoM will do WOT well!

I, too, would love a Wheel of Time mod... it's perfect. The lore refers to a "Breaking of the World" where the world is in a state not entirely unlike that of EWOM.
Men beginning to go mad channeling dangerous amounts of power, with the women with that power (although somewhat weaker) fighting to keep the world and civilization from being destroyed utterly. A culture of pacifists slowly falling from grace by the necessity of the dying land, and the noble Ogier slowly dying out from a Longing sickness caused by being torn from their beautiful Stedding... And ambitious people trying to make a place for themselves.
