Is there a way to get a copy of the intro video, and the Beta Videos I would like to copy them to my MP3 Player to watch and show to some of my friends so I can convince them to buy copies.

If you have a way to play UNDF files then just go to ,

C:\Program Files (x86)\Steam\steamapps\common\sins of a solar empire rebellion\Movie\OpeningCinematic

 

Otherwise record it on your device with a camera or save a link to youtube.

 This will get you started in being able to convert the video (it's encoded with Bink), You'll need some other tool, like HandBrake to get it encoded for your portable device.
