I find I tend to put everything to Faster as I feel there isn't enough for me to do in-game to justify the lower speed settings. What settings tended to be used by the multiplayer scene?

Faster
Indeed; multiplayer uses faster. You might occasionally get people to go with fast, but faster is generally the default.
All game-speeds are playable and the game will have a different feel and pacing to it depending on which you play.
Be aware that games online ("Faster" speed) also often seem to go by much more quickly than ("Faster") single-player games off of ICO. Described here:

So if you're thinking about playing multiplayer (which I highly recommend) but are still fighting AIs you might want to practice on ICO instead of in the Single-Player mode to help you get used to speed and lag issues sooner.
